To attach a descriptive label to a variable look at either

* the "setinfo" command or
* the menu item /Variable/Edit attributes (or select a variable
  in the main window, right-click and Edit attributes).

Look up the "xtab" command.  It can do cross-tabulations for 
several variables, if that is what you're looking for.
